On two separate occasions: Famous Garlic Cheese Bread, French Onion Soup, Baby Wedge Salad, Alberta Beef Carpaccio, Prime Alberta Dumplings, Broccolini, Pan Fried Mushrooms, Mac & Cheese Sticks, Lobster Tail, Chucks Steak Sauce, Béarnaise Sauce, Chimichurri Sauce, Alberta Raised Wagyu (Bone-in Ribeye & Millionaire Cut Bone-in Striploin), Famous Chuck's 10z Burger and Steak Frites. For dessert we tried: Salted Caramel Cheesecake & Coconut Chamomile Panna Cotta. Cocktails: Coal Miner's Daughter & Tea and Tonic.
One of the best restaurants downtown Banff and comes highly recommended from everyone I have spoken to. Conveniently located in the heart of Banff.
I do get a 50% discount here from work and this gets me talking about the place more.

The steaks may it be wagyu or house dry aged Alberta Beef, is what you should be going here for. These are the main reasons one should go to Chuck's although they do have a variety of other items on their menu. The Béarnaise sauce is a MUST with any of the steaks you decide to go with.
I also recommend the Prime Alberta Dumplings. Incredibly delicious and unique to this establishment.
Give their cocktails a go as well as the two that I did get to sample were amazing and delicious.
The two separate occasions that I did have dinner at Chuck's the service has been great. Very attentive and friendly server's who explained the menu quite thoroughly.
They answered my questions very well and helped me determine what I should order as the menu is quite large and there are multiple different ways you can try things.
The French Onion soup was OK. Nothing to rave about sad to say. I was expecting a little bowl that was covered in cheese that was piping hot. Unfortunately the lack of that did make the soup underwhelming. But hey, I didn’t come here for soup.
The Garlic cheese bread was yummy and packed with so much flavor. Also a big portion as well.
The Baby wedge salad looked and tasted fantastic. Huge portion with blue cheese, watermelon and bacon. It was a perfect start to a meal.
The Alberta Beef Carpaccio was also nothing special visually but it does speak volumes as to the quality of beef you are getting. With that, it does make a great dish.
The Prime Alberta Dumplings could be the best appetizer I've had here. This dish had great texture and bursting with flavors. It was moist and very fresh and definitely did not disappoint. The addition of a shrimp on top of this "shumai" dumpling also proves to make the dish great.
The broccolini was absolutely delicious as well. It was crunchy and full of flavor. Great addition to what can be considered a very heavy meal.
The pan fried mushrooms was alright. Again, nothing too special but delicious nonetheless.
The Mac & Cheese Sticks were humongous. I got it as a side thinking it was the size of mozzarella sticks. Nope, there were enormous and extremely cheesy. This could have been a meal on its on to be honest. My partner loved them and pretty much had the whole thing. Personally, these were not my favorite as the truffle oil smell and amount that was put into this dish really overpowered the whole thing. Truffle oil is a dangerous ingredient as it does kill every other smell and taste.
The lobster tails were a aside order that you can add at any time to any dish really. It was delicious, fresh and extremely succulent. Would recommend as an addition to a surf n turf dish. Its adds a lighter element to the meats and fats.
The burger was also a great dish when you don’t intend of eating a whole steak dinner. Prime quality meat with fries on the side. It was cooked to perfection and was juicy.
The first time I visited Chuck's, I ordered the Steak Frites and because of the quality of the meat and how it was cooked, I was confident on returning and trying out the rest. The steak was cooked perfectly, and came with a side of blackened shrimp, cowboy butter, fries and peppercorn jus. All of these worked great together and was a great first time meal.
Now for the pièce de résistance: the Wagyu steaks. I cannot stress any more that there were cooked and tasted like perfection. A spot on medium rare with amazing rendered down fat. One order was with the bone and the other without. Eating these was such a treat as you start to wonder, what on earth beef have I been eating before this? It melted in your mouth like butter and before you know it, its all gone. The wagyu steaks paired with a béarnaise and/or chimichurri sauce was to die for. Definitely the main reason why this restaurant is so popular.
The desserts were great. The cheesecake was one of the best ones I've had out here and will give it a try again next time I find myself at Chuck's. It was dense but in a good way. Full of flavor and definitely something that will tip you over the boat after such a heavy meal.
The panna cotta was underwhelming in my opinion. It did not look very appealing as the dessert was not plated the best. It needed some height or in a smaller bowl instead. We do eat with our eyes at the end of the day. Flavor wise, the coconut did come through but I did not get any indication of chamomile. Still a great, light dessert that ended an amazing night and meal.
The feel to this restaurant is great. It has a rustic charm tied in with the culture and décor of Alberta, especially Banff. Feels like an authentic steakhouse with wooden and leather features. Gorgeous bay windows in the dining area lets you see the views and mountains during the day and when it gets dark it gives a more intimate setting.
Perfect place to celebrate any occasion or even to just go for a good meal. Smart casual or even casual wear is appropriate. I have been to some pretty uptight steakhouses with worse food, so I am thankful for this establishment.
Chuck's Steakhouse is definitely a go-to if you ever find yourself in Banff. Expensive yes but worth every penny! Again, you will not find quality like this in any other parts of Canada if you are here for steak. Give it a go and you will not be disappointed! Thanks for a great time Chuck's!
