What I tried:
Sakura and Mont Tremblant. ($7 each).
Pro:
Canada's first all éclair patisserie.
The pop up in Mississauga enables you to try a few classic flavors before venturing to their store downtown Toronto.
By the former Jelly Modern Doughnuts pastry chef.
Con:
The pop up does not have all the flavors you would hope for, especially the savory ones.
There is no where to sit and enjoy the eclairs at the pop up.



Must Try:
The Sakura one was my favorite. Give that a try.
Based on their website, I would go to their flagship store to try the Raspberry Rose Lychee, Matcha Yuzu and the Foie Gras Eclairs.
The flagship store also serves gourmet hot chocolates, teas and coffees.



Service:
The service at the pop up was excellent. She went through all the options available and what was their best seller.

Food:
The eclairs were delicious. Extremely airy and soft with that perfect crunch.
The Sakura flavored one was subtle and not too sweet. Great balance of flavors especially with the cream inside.
I got the Mont Tremblant éclair because I was told that it was a darker chocolate and also not as sweet. It was just right and melted in your mouth beautifully. The pastry cream inside was also such a delight to eat.

Atmosphere:
The pop up was beautiful. I did not even realize it was a pop up and just thought it was an actual pastry shop.
Bright and colorful with the eclairs on display front and center.

Overall:
Yes $7 for an éclair is expensive. However, they are well worth it as the process of making them are very difficult and takes a lot of effort. Try the pop up and if you love it, give the actual store a visit!
